With all the posts about me loving baking and the many recipes for sweet stuff on my blog, you all might be wondering if I go into a sugar coma every day or if my family and I ever eat anything healthy. As much as I like to eat almost anything sweet, NO, I have never gone into a sugar coma and YES my family and I on occasion eat healthy food. Okay, so it’s probably more like semi-healthy food. That still counts, right?
I really do like this simple and slightly healthy pasta dish. Even if there is no sugar or bacon in it. You could easily make this dish vegetarian by omitting the turkey sausage. Feel free to use whatever vegetables or protein you like. Swapping the pasta for something like quinoa would be equally tasty. Hmmm… possible future recipe and post.

Shy Ronnie’s Roasted Vegetables and Turkey Sausage Pasta
8oz. mushrooms, chopped
½ medium onion, chopped
1 medium Italian squash, chopped
1 can large pitted olives
2 garlic cloves, minced
3-4 tablespoons olive oil
1 teaspoon salt
¼ teaspoon ground black pepper
1 lb. turkey sausage, casings removed
1 lb. your favorite pasta
Parmesan cheese, grated (optional)
Preheat oven to 425⁰F.
Combine mushrooms, onion, squash, olive, garlic, olive oil, salt, and pepper in a large bowl. Toss to coat. Spread in a single layer on a large baking sheet(s). Roast for 25-30 minutes or until desired doneness.
While vegetables are roasting, cook pasta according to package instructions. Set aside.
While waiting for pasta water to boil, heat a frying pan to medium. Add turkey sausage. Cook until no longer pink. Set aside.
Add roasted vegetables and turkey sausage to pasta. Toss to combine. Top with Parmesan cheese if so desired.
