Yesterday I was actually referencing Lord of The Rings when talking about graying hair. How did I get so geeky? I really don’t know. Perhaps it’s not geekiness. Maybe I just know a lot of random stuff about pop culture. Or maybe I’m just a geek.
So my friend and I were talking about how people dye their hair when it starts turning gray. I told her that I would think of my gray hairs as wisdom streaks. And that Gandalf the Grey was pretty wise. When he was sent back from the dead as Gandalf the White, he was even more badass. So, if you ever want a geeky reason to NOT dye your hair when it starts losing its natural color, think of Gandalf.
And now for something completely different.
Here’s a cheesecake like dessert I made last week.
This crust tastes pretty good on its own.
Some strawberry sauce and coconut.
It comes out A LOT smooshier than regular cheesecake.

Eowyn’s Strawberry and Coconut Cheesecake Squares adapted from cooks.com
½ cup macadamia nuts, chopped
¼ cup sugar
1 cup flour
¼ teaspoon salt
½ cup (1 stick) unsalted butter, chilled and cubed
2 (8 oz.) packages cream cheese, room temperature
1 (14 oz.) can sweetened condensed milk
1 teaspoon vanilla extract
⅓ cup strawberry sauce
½ cup (plus more for sprinkling) sweetened flaked coconut
Preheat oven to 350⁰F.
Combine macadamia nuts and sugar in a food processor fitted with a blade. Process until finely ground. Add flour and salt. Process until combined. Add butter and process in short bursts until the mixture looks like wet sand. Press mixture into the bottom and up the sides of an 8×8 glass baking dish. Bake for 12-15 minutes. Cool on wire rack.
In a large bowl, beat cream cheese until fluffy, about 2-3 minutes. Add sweetened condensed milk. Beat for 30 seconds. Stir in vanilla. Fold in strawberry sauce and coconut. Pour into prepared pan. Sprinkle coconut over the top. Chill for at least 4 hours or until set. Cut into squares and serve.
