I’m a bit late to the recap party.
Okay, so maybe I’m REALLY late to that party. Most people recap their year during the last week of December or in the first couple days of January. I can’t even really be considered fashionably late since it’s already the FIFTH day of January.
So, what happened in 2011?
I started working out semi-regularly.
I finally made my own ice cream.
I turned 30.
We renovated our kitchen.
Ummm… oh yeah.
I also started this blog.
Those of you who follow my blog regularly, all ten of you (okay, maybe it’s more like five or six), know how much I love blogging. I’ve said this a gazillion times before, but it really has become one of my passions. It brings me so much joy. On the joy-ness level scale, it’s right below my husband and daughters and on the same level as Doctor Who and baking.
Starting this blog has made me a happier person. It’s given me a creative outlet that I never really had before. I know she’ll never read this, but I truly have to thank Jessica from How Sweet It Is for inspiring me to start blogging. She is one of my favorite bloggers. EVER. Seriously, Jessica. We could totally be BFFs. And I mean that in a genuinely nice, non-creepy way.
So I guess 2011 was an awesome year for me.
I bet 2012 will be even awesomer. More awesome? Awesome to the 10th power?
Anyhoo, I made you some cookies.
Awesome no-bake cookies.
They aren’t the prettiest things in the world.
But how can you not ♥ something that’s got Nutella AND bacon in it?
Go make these. Like now.
No-Bake Nutella Bacon Cookies adapted from How Sweet It Is
1 ¼ cups graham cracker crumbs
½ cup Nutella
2-3 slices cinnamon sugared bacon, roughly chopped
⅓ cup maple syrup
½ teaspoon vanilla extract
1 tablespoon granulated sugar
2 tablespoons mini chocolate chips (optional)
- Combine all ingredients in a bowl and mix together. Dough will be crumbly, but continue to mix.
- Form 1 inch balls using a small ice cream scoop or your hands. If the dough is too crumbly to stick together, add some Nutella or syrup until it comes together a bit more.
- Very gently flatten balls with the back of a spoon or the bottom of a glass.
- Refrigerate for at least 30 minutes before serving.
