Orange Macadamia Nut Pecan Granola

When you want time to stand still.

Because before you know it they’ll be grown and on their own.

I’m gonna be a wreck when my girls go to college.

Orange Macadamia Nut Pecan Granola adapted from Dessert for Two


1 ½ cups rolled oats

½ cup sweetened coconut flakes

Zest of 1 orange

¼ teaspoon salt

¼ cup macadamia nuts

¼ cup pecans

2 tablespoons unsalted butter

Juice of ½ an orange

¼ cup honey

2 tablespoons maple syrup

1/8 teaspoon pure almond extract


  1. Preheat oven to 350⁰F.
  2. Grease a baking sheet and set aside.
  3. In a medium bowl, add oats, coconut, orange zest, salt, macadamia nuts, and pecans and stir to combine.
  4. In a small microwavable bowl, combine butter, orange juice, honey, maple syrup, and almond extract. Microwave for 30 seconds and stir. If needed, microwave for another 30 seconds until mixture is completely melted. Add to dry ingredients and stir to combine.
  5. Spread mixture onto baking sheet. Bake for 9 minutes. Stir. Bake for another 9 minutes.

  1. I love home-made granola. I make it ALL THE TIME. Addicted. Yours looks like a great twist that I will definitely try. Yes, the time sure does fly, and the baby of my family – and my only girl – will be heading to college this fall. I’m grateful she chose one an hour away so she could be close to home. I’m living those feelings you’re dreading. BUT, they also come with tremendous pride and appreciation. Plus, texting is awesome….so much easier to keep in touch. Thanks for the great recipe!

    • You’re welcome. I totally love homemade granola too. I’m half hoping that my girls will go to college close to home but part of me also really wants them to experience living in another place. I think I’ll just have to start accumulating airline miles so I can visit often. Have a lovely day! 🙂
