Mini Vanilla Bean Cheesecakes

Do you have a uniform?

And I don’t mean the uniform you would wear if you’re a post office worker, an airline pilot, or a former marching band geek.

I’m talking about your every day wear.

The kind you hang around the house in or head to the grocery store in.

At home I normally wear clothes that are just one notch above being pajamas. You know, tank tops or old shirts and comfy non-jean shorts. Yeah. That is basically what I wear every day. For anything that requires me to be seen by other people in public, I usually wear jeans or shorts and a t-shirt. Sometimes I might put on a dress if I want to feel fancy. I would love to wear something like this or this or this every day but when you’re a SAHM who bakes a lot, that’s just not in the cards.

Mini Vanilla Bean Cheesecakes adapted from Paula Deen


12 vanilla wafer cookies

2 tablespoons dulce de leche (optional)

2 (8 oz.) packages cream cheese, room temperature

1 cup granulated sugar

¼ cup all-purpose flour

1 teaspoon vanilla bean paste

2 eggs


  1. Preheat oven to 350⁰F.
  2. Line a 12 cup muffin tin with paper liners.
  3. Place one vanilla cookie in each muffin cup. Spoon ½ a teaspoon dulce de leche on each cookie. Set aside.
  4. In a large bowl, beat cream cheese with a hand mixer until light and fluffy. Add sugar, flour, and vanilla bean paste, beating to combine. Add eggs one at a time, beating after each addition. Spoon cream cheese mixture over dulce de leche.
  5. Bake for about 20 minutes or until set. Cool completely before serving.
