Mini Coconut Cheesecakes

I was never really a huge fan of cop/forensic science shows*. I did watch Hawaii 5-0 for a bit (hellooooo McGarrett) and I like Castle (Nathan Fillion!) but other than that, shows like CSI, Law & Order, or NCIS never struck my fancy. And then I watched Copper.

Copper is BBC America’s first original scripted series. It takes place in 1864 in the Five Points area of New York City. The show follows the life of Detective Kevin Corcoran, played by Tom Weston-Jones.

The fact that it’s set in the past really intrigues me. I find it fascinating how they had to look for evidence and determine causes of death back then. No fancy equipment or computers.

The first episode definitely left you wanting to watch the next one. Which is a good thing. I’m totally setting my DVR to record the entire series.

Mini Coconut Cheesecakes adapted from Paula Deen

Ingredients

12 vanilla wafer cookies

2 (8 oz.) packages cream cheese, room temperature

1 cup granulated sugar

¼ cup all-purpose flour

½ teaspoon coconut extract

¼ teaspoon almond extract (optional)

2 tablespoons Kona coffee coconut butter (optional)

2 eggs

1 cup shredded sweetened coconut flakes

Directions

  1. Preheat oven to 350⁰F.
  2. Line a 12 cup muffin tin with paper liners.
  3. Place one vanilla cookie in each muffin cup. Set aside.
  4. In a large bowl, beat cream cheese with a hand mixer until light and fluffy. Add sugar, flour, coconut extract, almond extract, and Kona coffee coconut butter, beating to combine. Add eggs one at a time, beating after each addition. Fold in shredded coconut. Spoon cream cheese mixture over vanilla wafers.
  5. Bake for about 20 minutes or until set. Cool completely before serving.
