Irish Car Bomb Cupcakes

Re-watch the entire Gilmore Girls series while indulging in gravy fries and milkshakes?

We were living the glamorous life.

Waited in line for a couple of hours to turn in applications for our daughters’ passports.

Went grocery shopping.

Did laundry.

We did get to have dinner and hang out with a couple of our friends who are visiting from San Francisco. That was really fun. And they always bring us chocolate when they visit. I like them a lot.

Speaking of chocolate, what’s better than chocolate cupcakes?

Chocolate cupcakes with booze in them!

These alcohol laden treats are perfect for any St. Patrick’s Day celebration.

Or just any day that ends in ‘y’.

Irish Car Bomb Cupcakes
(makes 12 cupcakes)

Ingredients

½ cup (1 stick) unsalted butter, room temperature
¾ cup granulated sugar
2 eggs
½ cup Guinness Draught
1 teaspoon pure vanilla extract
½ cup plus 2 tablespoons all-purpose flour
½ cup plus 2 tablespoons cocoa powder
1 teaspoon baking powder
½ teaspoon salt
1 batch Baileys Irish Cream Frosting (recipe below)
2 tablespoons chocolate sauce or syrup
½ teaspoon Jameson Irish Whiskey

Directions

  1. Preheat oven to 350⁰ F.
  2. In a large bowl, using a hand mixer, cream butter and sugar together for about 2 minutes. Add eggs, Guinness, and vanilla. Beat until combined.
  3. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Slowly add dry ingredients to wet ingredients. Mix until combined.
  4. Pour into lined cupcake tins and fill about ⅔ of the way full. Bake for 18-22 minutes or until a toothpick comes out clean.
  5. Cool cupcakes completely.
  6. Whisk together chocolate sauce and Jameson Irish Whiskey. Set aside.
  7. Frost cupcakes and drizzle Jameson chocolate sauce over the frosting.

Baileys Irish Cream Frosting

Ingredients

½ cup (1 stick) unsalted butter, room temperature
1 ¼ cups powdered sugar
½ teaspoon pure vanilla extract
1 tablespoon Baileys Irish Cream

Directions

  1. With a hand mixer, cream butter for 1-2 minutes.
  2. Add powdered sugar a little at a time while beating with a hand mixer. Once all sugar is incorporated, beat for 1-2 minutes more.
  3. Add vanilla and Baileys. Beat for another minute.
